Fruits in Jelly

Ingredients

Directions

Make the jelly

  1. Make 1 pint of clear calf's-foot jelly and pour half into a mould. Let it set until stiff.

  2. Place a bunch of purple grapes in the jelly, then arrange peaches around them with their stalks upwards.

  3. Pour the remaining jelly into the mould to fill it and refrigerate until the next day.

Unmould and serve

  1. Dip the mould in hot water for a few minutes to loosen the jelly, then turn it onto a fancy dish.

  2. Whip 1 pint of thick cream with red fruit juice and 3-4 tablespoons of caster sugar until stiff.

  3. Pour the whipped cream over the jelly and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's-foot jelly
Forms the clear, firm set that holds the fruit in place.
Thick cream
Whipped to a stiff foam that gives a light, rich topping.
Caster sugar
Sweetens the whipped cream and helps stabilise its foam.
Peaches
Add soft, sweet fruit flavour and contrast with the firm jelly.

The step that matters

Dip the mould in hot water for a few minutes. Brief warming melts a thin layer of jelly at the edge so it releases cleanly. Too long a dip softens the whole set and can slump or distort the jelly.

Swap the grape

How well each one fits the dish's main ingredients (peach, sugar, cream):

  1. Vanillafits better
  2. Raspberryfits better
  3. Strawberryfits better
  4. Grapethe original

Fit is the average pairing score against peach, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
