Why it works: Clove and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Rusk Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pound the almonds in a mortar, adding small amounts of egg white to prevent oiling.

  2. Butter a cake mould.

Make the batter

  1. Beat in the yolks of 14 eggs, sugar, lemon peel, cloves, and cinnamon for 30 minutes.

  2. Pound the rusks and sift them through a fine sieve, then mix with the lemon juice into the almond mixture.

  3. Gently fold in the whisked egg whites.

Bake

  1. Pour the mixture into the mould, filling it three‑quarters full.

  2. Bake in a moderate oven (350°F / 175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavour of the cake.
Egg yolks
Add richness and fat, and help bind the batter.
Egg whites
Whisked to stiff froth, they lighten the batter and help it rise and set.
Rusks
Add dry crumb structure and absorb moisture from the batter.
Caster sugar
Sweetens the cake and helps tenderise the crumb.

The step that matters

Folding in the egg whites. Whisked whites hold air that gives the cake its lift. Folding gently keeps that air in; stirring or deflating the mixture leads to a dense, flat cake.

Swap the clove

How well each one fits the dish's main ingredients (almond, egg, sugar, lemon, cinnamon, butter):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Tarragonfits about as well
  4. Clovethe original

Fit is the average pairing score against almond, egg, sugar, lemon, cinnamon, butter. Candidates are from the same food group and used in at least 100 recipes.
