Fricassee of Sweetbreads

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Soak the sweetbreads in cold water for a few hours, then blanch them in boiling water for 5 minutes.

  2. Remove the membranes and cut into pieces.

  3. Sauté the sweetbreads in butter until golden brown.

  4. Add sliced mushrooms and cook until tender.

  5. Stir in lemon juice and cooked peas, season with salt and pepper, and serve.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
