Why it works: Apple and cinnamon are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 5,598 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓

An Apple Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the bread

  1. Cut the bread into slices and remove the crusts.

  2. Spread each slice with sweet butter and cut them in half lengthwise.

Make the apple filling

  1. Pare and core the apples, then chop them finely.

  2. In a pan, stew the apples with sweet butter, white wine, and water.

  3. Once stewed, season with grated lemon zest and cinnamon, then fill the pan with the apple mixture.

Assemble and bake

  1. Line a pudding pan with the buttered slices, packing them closely.

  2. Place one whole slice in the center of the bottom and fill gaps with diced bread, buttered side down.

  3. Cover with more buttered bread, buttered side down, and add pieces of butter on top.

  4. Bake in a moderate oven (350°F / 175°C) for 45 minutes.

  5. Invert the loaf onto a plate to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the structure of the loaf and soaks up butter and apple juices as it bakes.
Apples
Provide the bulk of the filling, with moisture and sweetness that softens during stewing.
Sweet butter
Adds richness and helps the bread brown and crisp on the outside as it bakes.
White wine
Adds acidity and aroma to the stewed apples, brightening their flavour.

The step that matters

Stewing the apples before filling. Apples release a lot of liquid when heated. Stewing them first lets excess moisture evaporate so the filling does not make the bread soggy or leave the loaf wet inside.

Swap the lemon

How well each one fits the dish's main ingredients (bread, butter, apple, white wine, cinnamon):
