Another Way to Stew Duck

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Season the duck with salt, pepper, minced onion, and sage.

  3. Half roast the duck in the oven.

Make the sauce and stew

  1. In a pan, melt the butter and add the flour to brown.

  2. Add enough stock or water to half cover the duck.

  3. Place the duck in the pan, add the green peas, and let it stew for 30 minutes, stirring occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main protein and fat, which renders into the stew as it cooks.
Butter
Adds fat and richness, and carries flavour into the browned flour base.
Flour
Browned in butter, it thickens the stock into a light sauce.
Green peas
Add sweetness and body as they simmer in the stew.
Onion
Softens and adds savoury sweetness to the seasoning on the duck.

The step that matters

Half roast the duck before stewing. Roasting first renders some of the duck's fat and browns the skin, so the stew is not greasy and the meat gains roasted flavour. Skipping this leaves a pale, fatty result.

Swap the peas

How well each one fits the dish's main ingredients (pepper, onion, sage, butter, flour):

  1. Chestnutfits better
  2. Beansfits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against pepper, onion, sage, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
