Vermicelli Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. In a clean saucepan, combine milk, vermicelli, loaf sugar, and butter.

  2. Add the grated almonds, cinnamon, and lemon peel tied in a muslin bag.

  3. Simmer gently until the vermicelli softens and thickens.

  4. Remove from heat, pour into a baking dish, and take out the spice bag.

Finish and bake

  1. Stir in another ounce of butter and the brandy.

  2. Beat the eggs with a pinch of salt, strain into the mixture, and mix well.

  3. Grate nutmeg on top and bake at 350°F (175°C) until set.

  4. Avoid using a hot oven to prevent boiling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving the pudding its structure and body.
Vermicelli
Softens and thickens in the milk, forming the body of the pudding.
Milk
Provides the liquid base that gives the pudding its moisture and creamy texture.
Loaf sugar
Adds sweetness and helps the mixture thicken as it simmers.
Butter
Adds fat, enriching the texture and flavour of the pudding.

The step that matters

Bake gently, avoiding a hot oven. Eggs set into a custard when heated gently; a hot oven can make the mixture boil and curdle, leaving a grainy, uneven texture instead of a smooth set.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, butter, almond, cinnamon, brandy, egg):

Fit is the average pairing score against milk, sugar, butter, almond, cinnamon, brandy, egg. Candidates are from the same food group and used in at least 100 recipes.
