What each ingredient does

Calf stomach
Supplies the natural enzymes that curdle milk, which is the rennet's purpose.
Lemon
Adds acidity that brightens the liquid and helps it keep its flavour during steeping.
Cloves
Contribute warm, aromatic flavour to the steeped liquid.
Cinnamon
Contributes warm, sweet aroma to the steeped liquid.

The step that matters

Pouring the warm liquid over the stomach. Rennet enzymes are sensitive to heat, so the liquid should be only warm, not hot. Too much heat can weaken or destroy the enzymes that curdle milk later.

Swap the mace

How well each one fits the dish's main ingredients (rose, cinnamon, clove, marjoram, lemon):

  1. Cardamomfits better
  2. Allspicefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against rose, cinnamon, clove, marjoram, lemon. Candidates are from the same food group and used in at least 100 recipes.
