Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Lemon Custards
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Make the custard base
Grate the rind of the lemon.
Combine the grated rind with the sugar in the milk.
Boil for 30 minutes.
Strain and let cool.
Stir in the beaten and strained eggs, leaving out 3 egg whites.
Bake and serve
Pour into cups, adding melted butter to each cup.
Place the cups in a water bath and bake at 350°F (175°C).
Color the custards by holding a hot salamander over them.
Serve cold with sifted sugar on top.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Eggs
- Set the custard into a tender, sliceable structure as they cook.
- White sugar
- Sweetens the custard and balances the sharpness of the lemon.
- New milk
- Forms the liquid base that the eggs set into a creamy texture.
- Lemon rind
- Adds bright citrus aroma and flavor to the milk as it steeps.
- Fresh butter
- Adds richness and a smooth mouthfeel to each cup.
The step that matters
Stir in the beaten and strained eggs, leaving out 3 egg whites.. Eggs coagulate when heated, so the custard can curdle or turn grainy if the milk is too hot when they go in. Straining removes stray bits of cooked egg for a smooth set.
