Directions

Make the custard

  1. In a small saucepan, combine egg yolks, sugar, lemon peel, and salt. Mix well.

  2. Add milk and stir continuously over low heat until thick and smooth, but do not let it boil.

  3. Remove from heat and transfer to a basin to cool, stirring occasionally.

Finish and serve

  1. If desired, pass through a sieve for a nice appearance.

  2. Serve in glasses or cups with fresh or stewed fruit, or flavor with essence, brandy, or rum.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the milk as they set with gentle heat, giving the custard its body.
Milk
Forms the liquid base that the egg yolks thicken into a smooth custard.
Sugar
Sweetens the custard and balances the richness of the yolks and milk.

The step that matters

Cooking the custard over low heat without boiling. Egg yolk proteins set as they warm, and if the mixture gets too hot or boils, they tighten and curdle, leaving a grainy texture. Low heat and constant stirring keep it smooth and thick.
