Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Old green peas
Give the soup its main pea flavor and body once boiled and pulped.
Young peas
Add sweet, tender pea flavor and soft texture to the stewed vegetables.
Butter
Adds richness and a smooth, rounded mouthfeel to the finished soup.
Onions
Add savory aroma and depth as they soften during boiling and stewing.

The step that matters

Pulping the pea liquor through a sieve. Pressing the cooked peas and shells through a sieve releases their starch and pulp, which thickens the liquid and gives the soup a smooth body. Skipping or rushing this leaves the soup thin and grainy.

Swap the spinach

The recipe marks spinach as optional. How well each one fits the dish's main ingredients (peas, mint, onion, cucumber, lettuce, butter, pepper):

  1. Chivefits about as well
  2. Spinachthe original
  3. Leekfits about as well
  4. Cauliflowerfits about as well

Fit is the average pairing score against peas, mint, onion, cucumber, lettuce, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
