Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set during gentle heating.
Egg whites
Whisk into a stable foam that forms the floating topping.
Milk
Forms the liquid base of the custard.
Guava quince or red currant jelly
Adds sweetness and fruity flavour to the whipped topping.

The step that matters

Stir over low heat until thick. Egg proteins set at temperatures above their coagulation point, so high heat or neglect can scramble the custard into curds. Gentle, constant stirring keeps it smooth and thickened.

Swap the guava

How well each one fits the dish's main ingredients (milk, cinnamon, lemon, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Blueberryfits better
  4. Guavathe original

Fit is the average pairing score against milk, cinnamon, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
