Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift as the beaten eggs set the batter during baking.
Sugar
Adds sweetness and helps the cake brown as it bakes.
Ground rice
Forms the body of the cake and gives it a tender, crumbly texture.
Flour
Adds structure to the batter and helps it hold its shape.
Butter
Greases the tin so the cake releases cleanly and browns along the edges.

The step that matters

Combining the beaten eggs with the dry ingredients. Beaten eggs hold air that gives the cake lift, so mix gently and keep the batter from being overworked. Long mixing can knock out air and make the crumb dense.

Swap the caraway

The recipe marks caraway as optional. How well each one fits the dish's main ingredients (egg, sugar, rice, flour, lemon, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Turmericfits better
  4. Carawaythe original

Fit is the average pairing score against egg, sugar, rice, flour, lemon, butter. Candidates are from the same food group and used in at least 100 recipes.
