Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice flour
Thickens the milk as it boils, giving the flummery its set body.
New milk
Forms the liquid base that the rice flour thickens into a soft set.
Sugar
Sweetens the flummery to taste.
Peach water or bitter almond
Adds a strong aromatic flavour to the flummery.

The step that matters

Boil gently, stirring constantly. Rice flour settles and sticks to the base of the pan quickly. Without steady stirring and gentle heat it can scorch, giving a burnt taste and uneven thickening.
