Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the yolks and whites of the eggs separately.

  2. Melt the butter and cream until lukewarm.

  3. Add the ale yeast, sweet wine, and eggs to the butter and cream mixture.

  4. Strain the liquid into the dry ingredients and mix well.

  5. Add the spices and mix until combined.

  6. Butter a pan and pour in the mixture.

  7. Bake in a 400°F (200°C) oven for three hours.
