What each ingredient does

Rice
Cooked in milk until tender, it gives the pudding its body and soft bulk.
Eggs
Beaten eggs set during cooking, binding the pudding and giving it a custard-like firmness.
New milk
Cooks with the rice to make a creamy base and keeps the pudding moist.
Ratafia
Adds a bittersweet almond-like aroma that flavors the whole pudding.

The step that matters

Boil rice in new milk until tender and not too dry. Rice must absorb the milk fully while staying moist. Undercooked rice stays firm, and overcooked rice dries out, which affects texture after the eggs are added and the pudding is boiled.
