Why it works: Raisin and flour match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Excellent Trifle

Ingredients

Directions

  1. Layer macaroons and ratafia drops in the bottom of a dish.

  2. Pour enough raisin wine over them to soak.

  3. Add a layer of cold rich custard made with extra eggs and rice flour, about 2-3 inches thick.

  4. Spread a layer of raspberry jam on top.

  5. Whip rich cream with 2 beaten egg whites, sugar, and lemon peel until fluffy.

  6. Cover the trifle with the whipped cream mixture.

  7. For best flavor, prepare the whipped cream a day in advance.
