What each ingredient does

Eggs
Bind the mixture and help the pudding set as it cooks.
Bread crumbs
Absorb the milk and give the pudding a soft, body-filled structure.
Mincemeat
Supplies the main fruit, spice and sweetness of the pudding.
Butter
Adds richness and fat, carrying flavour in both pudding and sauce.
Lemon juice
Adds acidity that brightens the rich sauce.

The step that matters

Fill the basin completely. Leaving air gaps in a steamed or boiled pudding can let it collapse or cook unevenly, so the basin should be packed full before boiling.
