What each ingredient does

Green peas
Provide the main body of the soup and its sweet, vegetal flavour.
Cucumbers
Add moisture and a fresh, cool flavour to the soup.
Lettuces
Add soft leafy bulk and a mild, green flavour that thickens the purée.
Onion
Adds savoury depth as it softens and sweetens in butter.
Pea shells
Release their flavour into the cooking liquid, giving the soup a concentrated pea taste.

The step that matters

Simmer gently for 1 hour. A gentle simmer keeps the vegetables tender and the soup smooth. A hard boil can break down the greens, dull their colour, and make the texture uneven before the soup is sieved.

Swap the white pepper

How well each one fits the dish's main ingredients (peas, cucumber, lettuce, onion, parsley, mint, butter):

  1. Tarragonfits better
  2. Capersfits better
