Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Butter a pie dish and cover the bottom with a thin layer of bread crumbs.

  3. Layer the sliced apples on top of the crumbs.

Layer and bake

  1. Sprinkle sugar and add grated lemon rind or a clove with the apples.

  2. Dot the top with 2 or 3 knobs of butter.

  3. Repeat layering with crumbs, apples, sugar, and butter, finishing with crumbs on top.

  4. Pour 1 cup of water over the layers.

  5. Bake slowly for 1.5 hours or until the apples are soft and the crumbs are brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking apples
Soften during baking to form the moist, tender filling that makes up most of the dish.
Bread crumbs
Form layers that soak up juices and bake to a browned, crisp topping.
Butter
Adds richness and helps the top crumbs brown as they bake.
Sugar
Sweetens the apples and helps them caramelize slightly at the edges.

The step that matters

Bake slowly until the apples are soft. Low, slow heat lets the apple slices soften through and the crumbs brown gradually without drying or burning. Pulling it too early leaves firm apples, and high heat can scorch the top before the centre is cooked.

  2. Pearbetter flavor fit
  3. Vanillabetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against apple, bread, butter, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
