What each ingredient does

Eggs
Bind the mixture and add richness and structure as they set during cooking.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Grated bread
Soaks up liquid and gives the pudding a soft, tender body.
Flour
Adds structure that holds the pudding together while it boils.
Sugar
Sweetens the pudding and helps it develop a deeper flavour.
Brandy
Adds aroma and flavour and helps preserve the pudding.

The step that matters

Boil each pudding for 6 hours. Long, steady boiling cooks the eggs and starches fully and melts the suet into the crumb. Too little time leaves the pudding wet and dense, so keep the water simmering throughout.

Swap the currant

How well each one fits the dish's main ingredients (bread, flour, raisin, sugar, nutmeg, lemon, egg):

  1. Figfits better
  2. Vanillafits better
