Ingredients
Directions
Cut off all the crust from the stale brown loaf.
Rub the crumb of bread through a wire sieve into a bowl.
Boil ½ cup of milk in a saucepan.
In a basin, combine 5 ounces of bread crumbs and 3 ounces of castor sugar.
Grate the rind of the lemon over the bread crumbs.
Add ½ teaspoon of essence of vanilla to the mixture.
Boil a saucepan of warm water.
Pour the boiling milk over the bread crumbs.
In a separate basin, whip ½ cup of cream to stiff peaks.
Stir the whipped cream into the bread mixture, then add the yolks of 4 eggs one at a time.
Whip the whites of 2 eggs to stiff peaks and gently fold them into the mixture.
Butter a 1-pint mold well inside.
Pour the mixture into the mold, butter a piece of kitchen paper, and place it over the top.
