Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Roast the lamb

  1. Cover the saddle of lamb with buttered paper.

  2. Place it over a clear fire or in a 400°F (200°C) oven.

  3. Baste well during cooking.

  4. When nearly cooked, remove the paper and sprinkle flour over the lamb.

  5. Baste again until nicely browned.

Serve

  1. Serve with mint sauce and suitable accompaniments.

What each ingredient does

Saddle of lamb
Is the main cut of meat that is roasted and carved.
Flour
Dusted over the lamb near the end to help it brown and form a crisp surface.
Buttered paper
Covers the lamb early on to shield it from direct heat and keep it moist.

The step that matters

Removing the paper and basting until browned. Once the paper comes off, the surface is exposed to heat and can burn quickly. Frequent basting with fat keeps it moist while the flour and meat sugars brown evenly.
