What each ingredient does

Rice
Starch that softens as it simmers and, once cooled, sets into a firm, sliceable body.
Sugar
Adds sweetness and helps the cooled rice hold its shape by binding moisture.
Sherry or madeira
Adds aroma and depth of flavor to the cooking liquid.
Lemon juice
Adds acidity that brightens the sweetness and balances the wine.

The step that matters

Simmer until the rice is thoroughly cooked. Rice must be fully tender before it is molded, because starch that is still firm will not soften further once set. Undercooked grains leave a gritty texture, while thoroughly gelatinized starch cools into a smooth, firm mass that holds its shape when turned out.
