Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mould

  1. Butter a mould well.

  2. Line the mould with thin wholemeal bread and butter.

  3. Egg and crumb the inside of the mould.

Cook the apples

  1. Peel, core, and slice the apples.

  2. Toss the sliced apples in butter with a little water and grated lemon peel.

  3. Cook the apples over medium heat until cooked.

Assemble and bake

  1. Fill the mould with the cooked apples.

  2. Cover with more bread and butter.

  3. Bake in a hot oven at 400°F (200°C) until the bread is nicely browned, about 20 minutes.

  4. Turn out and serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the crisp, golden shell that holds the soft apple filling together.
Butter
Adds richness and helps the bread brown in the oven.
Apples
Provide the main filling, becoming soft and sweet as they cook.
Lemon rind
Adds fragrant aroma that brightens the sweetness of the apples.

The step that matters

Egg and crumb the inside of the mould. Egg and crumbs form a coating on the mould's inner surface. Without an even coating, the bread can stick and tear when the charlotte is turned out.

Swap the lemon
