What each ingredient does

Rice flour
Its starch swells and thickens the milk as it heats.
Milk
Forms the liquid base that sets into a soft, creamy body.
Sugar
Adds sweetness to balance the cinnamon and lemon flavor.

The step that matters

Gently boil while stirring until thickened. Rice starch only thickens once it is heated in liquid. Stirring throughout prevents lumps and scorching on the base of the pan, so the mixture thickens evenly before it goes into the mold.
