Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the pulp and help the filling set firm when baked.
Gooseberries
Provide the main fruit flavour and tartness, and the body of the filling.
Bread crumbs or naples biscuits
Absorb liquid and give the filling a softer, more cohesive texture.
Sugar
Adds sweetness and balances the tartness of the gooseberries.

The step that matters

Straining the eggs into the cooled pulp. If the pulp is still hot, the eggs can scramble or cook unevenly before baking. Cooling the pulp first keeps the egg mixture smooth so it sets evenly in the oven.

Swap the orange

How well each one fits the dish's main ingredients (egg, bread, sugar, lemon, nutmeg, rose):

  1. Orangethe original
  2. Vanillafits about as well
  3. Figfits about as well
  4. Raisinfits less well

Fit is the average pairing score against egg, bread, sugar, lemon, nutmeg, rose. Candidates are from the same food group and used in at least 100 recipes.
