To Prepare Rennet to Turn the Milk

Ingredients

Directions

Prepare the stomach

  1. Clean the stomach of a calf thoroughly inside and out with salt, then let it drain for a few hours.

  2. Sew the stomach up with two handfuls of salt or stretch it on a well-salted stick.

Make the infusion

  1. In a pot, combine 2 quarts of fresh spring water with hawthorn-tops, sweet-brier, rose-leaves, cinnamon, cloves, mace, knotted-marjoram, and salt.

  2. Boil gently until reduced to 3 pints, then strain the mixture.

  3. When the liquid is milk-warm, pour it into the cleaned stomach.

  4. Slice a lemon and add it to the mixture.

Steep and bottle

  1. Let it stand for two days.

  2. Strain it again.

  3. Bottle for use.

What each ingredient does

Stomach of a calf
Supplies the natural enzymes that curdle milk, and is the core of the rennet.
Lemon
Adds acidity that brightens the liquid and helps balance its flavour.
Cloves
Contributes a warm, aromatic spice flavour to the infused liquid.
Cinnamon
Contributes a warm, sweet aroma to the infused liquid.

The step that matters

Pouring the warm liquid into the stomach. The liquid should be only milk-warm. Enzymes in the stomach lining work best at moderate temperatures, and very hot liquid can damage them, weakening the rennet.

Swap the mace

How well each one fits the dish's main ingredients (rose, cinnamon, clove, marjoram, lemon):

  1. Cardamomfits better
  2. Allspicefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against rose, cinnamon, clove, marjoram, lemon. Candidates are from the same food group and used in at least 100 recipes.
