Ingredients

Directions

Cook the rice

  1. Rinse the rice.

  2. Place the rinsed rice in a pot with just enough water to cover it.

  3. Cook until the rice is nearly bursting.

  4. Add the milk or cream.

  5. For added flavor, mix in spices and lemon peel with the milk.

  6. Boil, stirring constantly to prevent burning, until the mixture is a thick mash.

Mold and set

  1. Dip a mold in cold water without drying it.

  2. Fill the mold with the rice mixture.

  3. Let it cool completely in the mold before unmolding.

Serve

  1. Remove the lemon peel before serving.

  2. Serve with cream, custard, or preserved fruits like raspberries.

What each ingredient does

Whole rice
Starch that softens and thickens into the body of the blancmange.
Milk or thin cream
Adds liquid and richness, and sets with the rice into a creamy texture.
Loaf sugar
Adds sweetness to balance the mild, creamy base.

The step that matters

Stirring while the mixture boils. Rice and milk thicken quickly and scorch on the bottom of the pot if left unstirred, giving a burnt taste and a mash that sets unevenly.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (tea, rice, milk, sugar):

  1. Vanillafits better
  2. Peachfits better
  3. Coconutfits about as well
  4. Lemonthe original
