Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs bind the filling and help it set firm when baked.
Gooseberries
Provide the main fruit flavour and tartness, and their pulp gives the filling its body.
Butter
Adds richness and a tender texture to the filling.
Bread crumbs or naples biscuits
Soak up the fruit juice and thicken the filling so it holds together.

The step that matters

Bake until set and golden brown. Eggs set as they heat, so the filling must be baked until firm in the centre. Pulling it too early leaves it runny, while over-baking can make the eggs weep and become rubbery.
