Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Prick the pie crust with a fork to prevent rising.

  3. In a double boiler or saucepan, combine sugar, salt, grated lemon, beaten egg yolk, and dissolved corn starch in cold water.

  4. Mix well, then pour in boiling water and cook until thickened.

  5. Once the mixture cools, pour it into the crust.

  6. Top with beaten egg white and sprinkle with powdered sugar.

  7. Bake until the top is light brown.
