Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.
Make the batter
Preheat the oven to 350°F (175°C).
In a bowl, mix sugar, molasses, and butter until smooth.
Add ginger, cinnamon, and cloves and mix well.
Dissolve baking soda in boiling water and add to the mixture.
Gradually stir in flour until combined.
Fold in beaten eggs just before baking.
Bake and serve
Pour the batter into two greased pans.
Bake for 25-30 minutes or until a toothpick comes out clean.
Once baked, let cool and sprinkle with powdered sugar before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Molasses
- Adds moisture, dark color, and deep sweetness with a characteristic flavor.
- Butter
- Adds fat for a tender crumb and rich flavor.
- All-purpose flour
- Provides the structure that holds the batter together as it bakes.
- Baking soda
- Reacts with the acidic molasses to produce gas that lifts and lightens the batter.
- Eggs
- Bind the batter and add structure and richness to the crumb.
- Sugar
- Adds sweetness and helps moisten and brown the crust.
The step that matters
Dissolving the baking soda in boiling water. Baking soda must be fully dissolved so it reacts evenly with the molasses. Undissolved pockets can cause bitter spots and uneven rising, so the batter should be mixed thoroughly once it is added.
Swap the ginger
How well each one fits the dish's main ingredients (sugar, molasses, butter, cinnamon, clove, flour, egg):
- Nutmegfits better
- Allspicefits better
- Cardamomfits about as well
