Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling as it boils, giving it a set, sliceable body.
Egg
Adds richness and helps the filling set as it bakes.
Lemon juice and rind
Provides the sharp acidity and aroma that define the pie.
Sugar
Sweetens the filling and balances the lemon's acidity.
Butter
Adds fat for a smooth, rich texture in the filling.

The step that matters

Stirring the corn starch into the boiling water. Corn starch must be fully hydrated and brought to a boil to thicken. Wetting it first with cold water keeps it from clumping, and it needs to reach a boil to reach full thickening power.
