The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pulp

  1. Stew the gooseberries with 1 cup of sugar for 1 hour.

  2. Rub the mixture through a colander to make pulp.

Bake and serve

  1. Add ½ cup of butter, ½ cup of sugar, 2 cups of bread crumbs, and 3 beaten eggs to the pulp.

  2. Pour the mixture into a buttered baking dish.

  3. Bake at 350°F (175°C) for 30 minutes.

  4. Serve with powdered sugar or a sauce.

What each ingredient does

Gooseberries
Provide the fruit base and tart flavor that the pudding is built around.
Eggs
Bind the mixture and help it set into a soft, custard-like texture when baked.
Bread crumbs
Absorb liquid and give the pudding body so it holds its shape after baking.
Butter
Adds richness and a tender, moist crumb to the baked pudding.
Sugar
Sweetens the tart gooseberries and adds flavor to the pudding.
