Ingredients

Directions

The book says “a steady oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dish

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, sugar, and cinnamon or nutmeg.

  3. Butter a quart pudding dish and layer half the apples in it.

Assemble and bake

  1. Add half the bread crumb mixture on top of the apples.

  2. Dot with some butter pieces.

  3. Repeat with remaining apples and bread crumb mixture, topping with butter.

  4. Pour boiling water over the mixture.

  5. Cover and bake for 40 minutes.

  6. Remove the cover and bake for an additional 10-15 minutes until browned.

Make the sauce

  1. For the sauce, whip the cream until stiff, then mix in powdered sugar and lemon extract.

  2. Chill the sauce in the refrigerator until serving. If too stiff, add milk.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tart apples
Provide the fruit base and tartness that balances the sweet topping.
Bread crumbs
Soak up juices and form a soft, crumbly layer that bakes golden on top.
Butter
Adds richness and helps the crumb topping brown as it bakes.
Granulated sugar
Sweetens the crumb layer and helps it caramelize lightly while baking.
Heavy cream
Whipped into a stiff, airy sauce that adds richness to the dessert.

The step that matters

Remove the cover and bake until browned. Covering keeps the apples moist and cooks them through; uncovering lets surface moisture evaporate so the crumbs brown rather than stay soggy.

Flavor stand-ins for the lemon

  2. Figbetter flavor fit
  3. Pearbetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against apple, bread, sugar, cinnamon, butter, cream, milk. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
