Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the peaches

  1. Make a rich biscuit dough.

  2. Cut the dough into small squares.

  3. Peel the peaches.

  4. Cut the peaches in half.

  5. Remove the seeds from the peaches.

  6. Fill the cavities with sugar.

  7. Cover with the other half of the peach, adding a little sugar on top.

Assemble and bake

  1. Pinch the edges of the dough over the peach to seal it.

  2. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Serve

  1. Serve hot or cold with sugar and cream.

What each ingredient does

Rich biscuit dough
Forms an enclosing pastry that bakes into a tender, flaky wrapper around the fruit.
Peaches
Provide the fruit filling that softens and becomes juicy as it bakes.
Sugar
Adds sweetness and helps draw out and flavor the peach juices.
Cream
Adds richness and a cool, smooth contrast to the warm dumpling.

The step that matters

Pinch the dough edges over the peach to seal it. A tight seal keeps the juices inside while baking; gaps let syrup leak out, which can leave the dough soggy and the filling dry.

Swap the peach

How well each one fits the dish's main ingredients (biscuit, sugar, cream):
