Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the dough and add richness and colour to the fritters.
Egg whites
Folded in to lighten the dough and help it puff when fried.
All-purpose flour
Forms the soft paste that gives the fritters their structure.
Powdered sugar
Sweetens the dough and the sauce.
Cream
Adds moisture and richness to the dough.

The step that matters

Fry the circles in hot lard until they puff up. If the lard is not hot enough, the fritters absorb more fat and turn greasy and dense instead of puffing and browning quickly. Frying at a steady high heat sets the outside while the air and moisture inside expand.
