Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells when boiled, giving the fritters a soft, tender body.
Eggs
Bind the mixture together and set as the fritters cook, adding structure.
Flour
Thickens the batter so the spoonfuls hold their shape in the pan.
Currants
Add pockets of sweetness and chewy texture throughout the fritters.
Lard
Conducts heat in the pan and browns the outside of the fritters.

The step that matters

Drain the rice completely. Excess water from the boiled rice thins the batter, so the spoonfuls spread and may not thicken properly with flour. Draining fully keeps the batter thick enough to fry.

Swap the currant

How well each one fits the dish's main ingredients (rice, egg, lemon, nutmeg, sugar, flour):

  1. Raisinfits better
  2. Limefits better
  3. Vanillafits better
  4. Currantthe original

Fit is the average pairing score against rice, egg, lemon, nutmeg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
