Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks give richness and whites, folded in beaten, add lightness and help the fritters puff.
All-purpose flour
Forms the starch and gluten structure that holds the soft paste together.
Powdered sugar
Sweetens the dough and dissolves smoothly into the yolks for a fine texture.
Lard
Hot fat that cooks the outside quickly, browning the fritters and making them puff.
Cream
Adds fat and moisture, giving the dough a tender crumb.

The step that matters

Fry the circles in hot lard until they puff up. If the lard is not hot enough, the fritters absorb fat and turn greasy and dense instead of puffing and browning quickly on the outside.
