Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Beat the eggs, butter, and brown sugar together.

  2. Add the bread sponge, molasses, sweet milk, raisins, currants, lemon peel, citron peel, cinnamon, cloves, and allspice.

  3. Mix in enough flour to achieve a consistency similar to an ordinary fruit cake.

Bake

  1. Pour the mixture into a greased loaf pan and bake at 350°F (175°C) until a toothpick comes out clean.

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Bread sponge
Leavens the batter and adds a yeasted, slightly tangy crumb.
Butter
Adds fat for a tender crumb and rich flavor.
Molasses
Adds moisture, dark color, and deep sweetness.
Flour
Provides the structure that holds the fruit and crumb together.
Raisins
Add moisture and chewy sweetness throughout the loaf.

The step that matters

Adding enough flour. The batter must be stiff enough to hold the fruit and set in the pan. Too little flour leaves a wet, gummy loaf that may not hold its shape, while too much makes it dense and dry.

Swap the lemon
