What each ingredient does

Egg yolks
Enrich the dough with fat and richness, adding tenderness and color.
Egg whites
Whipped into the dough to add lightness and help the fritters puff when fried.
All-purpose flour
Provides the starch and gluten structure that holds the soft paste together.
Powdered sugar
Adds sweetness and dissolves smoothly into the yolks for a fine texture.
Lard
Frying fat that carries heat evenly so the fritters brown and crisp outside.

The step that matters

Frying the circles in hot lard. If the lard is not hot enough, the fritters absorb grease and turn heavy instead of puffing and browning. Keeping the fat at a steady hot temperature seals the outside quickly so the inside cooks through.
