Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Line a baking dish with buttered paper.

Make the batter

  1. In a bowl, combine the sugar and rice flour.

  2. Break the eggs into the bowl and add the vanilla.

  3. Whip the mixture with a dinner knife for 15 minutes.

  4. Add a few drops of essence of lemon and mix well.

Bake

  1. Pour the batter into the dish and bake for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift when whipped into the batter, helping the cake set.
Rice flour
Forms the main body of the cake and sets as it bakes.
Sugar
Adds sweetness and helps give the batter its tender texture.

The step that matters

Whip the mixture with a dinner knife for 15 minutes. Whipping traps air in the egg and batter, which gives the cake its rise and light crumb. If the batter is under-whipped, the cake may be dense and flat after baking.

Swap the lemon
