Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks set the custard and add richness, while beaten whites add lightness.
Butter
Adds fat for a smooth, rich texture and mouthfeel.
Flour
Thickens the mixture so it holds a smooth, sliceable body.
Sugar
Provides sweetness and helps balance the tartness of the lemon.
Lemon
Supplies acidity and bright aroma that cut through the richness.

The step that matters

Fold in the beaten egg whites last. Beaten whites trap air that gives lightness. Stirring them vigorously deflates them, leaving a denser custard, so fold gently until just combined.
