Soft Gingerbread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the molasses and sugar.

  3. Add the melted butter and mix well.

  4. In a separate bowl, beat the eggs and then add them to the molasses mixture.

  5. Dissolve the baking soda in the sweet milk and add it to the mixture.

  6. Gradually stir in the sifted flour until well combined.

  7. Add ginger to taste and mix thoroughly.

Bake

  1. Pour the batter into a greased baking pan and bake for about 30-40 minutes or until a toothpick comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Provides dark color, moisture and the characteristic gingerbread sweetness and flavor.
Eggs
Add structure and richness, helping the cake set as it bakes.
Baking soda
Reacts with the molasses acidity to lift the batter and keep the crumb soft.
Flour
Forms the structure of the cake as its proteins set during baking.
Butter
Adds fat for a tender texture and rich flavor.
Sweet milk
Adds moisture and helps hydrate the flour for a softer crumb.

The step that matters

Dissolving the baking soda in the milk. Baking soda must react with the acidic molasses to lift the batter. If it is not fully dissolved, it can leave bitter pockets and uneven rising, so stir it until smooth before adding.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, sugar, flour, butter, egg, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Allspicefits about as well

Fit is the average pairing score against molasses, sugar, flour, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
