What each ingredient does

Blackberries
Provide the juice that forms the base and gives the syrup its fruity flavor.
Sugar
Sweetens the syrup and thickens it as the juice reduces and cools.
Brandy
Adds alcohol-based aroma and flavor, stirred in off the heat to keep it from cooking away.

The step that matters

Stir in the brandy before removing from heat. Alcohol evaporates quickly at boiling temperatures, so adding brandy at the end keeps more of its aroma and flavor in the finished syrup.

Swap the mace

How well each one fits the dish's main ingredients (sugar, cinnamon, clove, allspice, brandy):

  1. Nutmegfits better
