Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Softens as it cooks and thickens the milk into a creamy pudding base.
Eggs
Set when baked, giving the pudding a firmer, custard-like structure.
Milk
Provides the liquid that the rice absorbs and that gives the pudding its creamy body.
Sugar
Adds sweetness and helps keep the pudding tender.
Butter
Adds richness and a smooth, rounded mouthfeel.

The step that matters

Stir in the beaten eggs off the heat. Adding eggs to very hot mixture can scramble them. Removing the pan from heat first lets the eggs blend in smoothly, so they set evenly during baking.

Swap the lemon
