Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 300°F (150°C).
Beat the egg whites and yolks separately.
Cream the butter and sugar after pulverizing and sifting.
Add the beaten yolks to the creamed mixture.
Dissolve the baking soda in warm water and stir into the molasses.
Add the molasses mixture to the batter, then mix in the flour.
Fold in the beaten egg whites until well combined.
Dredge the fruit with flour and chop the nuts, but not too fine.
Add all the fruit, nuts, and spices to the batter and mix well.
Pour the mixture into prepared cake pans and bake for 4 hours.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
