Why it works: Ginger and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,380 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients
Directions
In a large bowl, beat together the molasses, sugar, and melted lard and butter.
Add the eggs and mix well.
Stir in enough flour to create a thick batter.
In a separate bowl, dissolve the baking soda in the hot water, then add to the mixture and beat until smooth.
Add the salt, ginger, and cinnamon, then mix in enough flour for a stiff batter.
Let the dough rest for as long as convenient, preferably overnight.
Roll out the dough as soft as possible, saving the trimmings until all has been rolled once.
Combine the trimmings and roll out again.
