Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Molasses Taffy

Ingredients

Directions

Make the taffy base

  1. Combine brown sugar, water, sorghum molasses, and corn syrup in a saucepan.

  2. Boil until the mixture threads when dropped from a spoon.

  3. Dissolve baking soda in vanilla extract and stir into the mixture.

  4. Remove from heat and pour into a buttered pan.

Cool, pull and cut

  1. Cool by folding the edges to the center.

  2. When cool enough to handle, pull on a hook and cut into sticks.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and vanilla barely smell alike, yet cooks put them together in 35,032 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the main sweetness and molasses-like flavour and helps set the candy's chewy body.
Sorghum molasses
Adds deep flavour and moisture, and keeps the taffy soft and chewy rather than brittle.
Corn syrup
Inhibits sugar crystallisation, giving a smooth, pliable texture.
Baking soda
Reacts with the hot syrup to add tiny gas bubbles, lightening the texture and making it easier to pull.

The step that matters

Boil until the mixture threads when dropped from a spoon. Cooking to the right stage controls how much water remains. Too little cooking leaves the taffy sticky and soft; too much makes it hard and brittle once cool.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, sorghum, molasses, corn, syrup):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, sorghum, molasses, corn, syrup. Candidates are from the same food group and used in at least 100 recipes.
