Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean lamb
Forms the main body of the meatballs and gives them their meaty flavour.
Eggs
Bind the lamb mixture and help it set firm when steamed.
Brown sauce
Adds moisture and savoury flavour to the lamb mixture.

The step that matters

Steam the moulds gently. Steaming at a steady gentle heat lets the egg set the lamb evenly. Boiling or high heat can make the egg curdle and turn the texture rubbery and dry.

Swap the peas

How well each one fits the dish's main ingredients (lamb, egg, sauce, carrot, butter, pepper):

  1. Beansfits better
  2. Sesamefits about as well
  3. Almondfits about as well
  4. Peasthe original

Fit is the average pairing score against lamb, egg, sauce, carrot, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
