German Rice Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line and decorate a pie dish with the pastry.

Make the custard

  1. Bring the milk to a boil, then add the sugar, butter, lemon rind, and a good pinch of salt.

  2. Sprinkle in the rice, stir until it boils, and cook gently for about 20 minutes, stirring frequently.

  3. Let it cool slightly, then add the egg yolks and one egg white, whisking until stiff.

Bake and serve

  1. Pour the mixture into the prepared pie dish and bake for about 30 minutes, or until set.

  2. Whisk the remaining two egg whites until stiff and pile them on the pudding.

  3. Dredge liberally with caster sugar and return to the oven until the meringue hardens and acquires a little color.

  4. Serve hot.

What each ingredient does

Ground rice
Thickens the milk as it cooks, giving the pudding its body.
Eggs
Set the custard when baked and add structure, and whipped whites form the meringue topping.
Milk
Forms the liquid base that the rice cooks in and sets into a creamy custard.
Sugar
Sweetens the pudding and helps the meringue brown lightly in the oven.
Butter
Adds fat for a richer, softer texture and mouthfeel.
Lemon rind
Adds a bright citrus aroma that lifts the sweet, creamy flavor.

The step that matters

Let the rice mixture cool slightly before adding the eggs. Eggs added to very hot liquid can scramble and curdle instead of blending smoothly. A short rest lets the mixture cool enough that the eggs thicken it evenly during baking.

Swap the lemon

How well each one fits the dish's main ingredients (rice, butter, sugar, milk, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, butter, sugar, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
